Cucumber Salsa Recipe

With cucumbers being so abundant right now we thought it would be fun to come up with a fun way to feature these crunchy little melons (did you know cucumbers are technically melons) that makes them the star of the show.  What better way than a fresh, simple salsa to let the flavors of the cumbers shine!  You can eat this salsa with chips, on tacos, have it as a side dish, add it to  a salad, or of course bring it to a potluck!

  • 2 cups finely diced peeled cucumber

  • 1/2 cup finely diced red onion

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup chopped fresh mint

  • 1 jalapeño (with seeds), finely diced

  • 3 tablespoons fresh lime juice

  • 1 tablespoon vegetable oil

  • Kosher salt and freshly ground black pepper

Mix first five ingredients in a medium bowl. Stir in lime juice and oil. Season to taste with kosher salt, freshly ground black pepper, and more lime juice, if desired.  Yields about three cups.
