RECIPE: Rad Red Summer Salad

Servings: 6
Time:  10 minutes
What you need: a large mixing bowl, a cutting board, a big sharp knife (for watermelon), and a serrated knife (for tomatoes)

 

INGREGIENTS

  • 3 cups Seedless watermelon, cubed

  • 3 cups cherry tomatoes, halved

  • 1 Red Onion or 2 shallots, finely sliced

  • 1/2 cup Basil, roughly torn

  • 1/2 cup goat cheese, crumbled

  • 2-3 tablespoons Red Wine or Balsamic Vinegar

  • 2-3 tablespoons extra virgin olive oil

  • Sprinkle of sea salt

  • Pinch of cayenne pepper (optional)

 

DIRECTIONS

 

Put all ingredients in large bowl and mix well.  Serve immediately.
